An enzyme catalyzing the reversible interconversion of α- and β-aldoses ( e.g., α- and β-d-glucose); also acts on l-arabinose, d-xylose, d-galactose, maltose, and lactose. SYN: aldose mutarotase, mutarotase.

al·dose 1-epim·er·ase (alґdōs ə-pimґər-ās) [EC 5.1.3.3] an enzyme of the isomerase class that catalyzes interconversion of the α- and β- forms of D-glucose, L-arabinose, D-xylose, D-galactose, lactose, and maltose. Commonly called mutarotase.
