enzyme activity
the catalytic effect exerted by an enzyme, expressed as units per milligram of enzyme (specific activity) or as molecules of substrate transformed per minute per molecule of enzyme (molecular activity). The conventional unit of enzyme activity is the International Unit (IU), equal to one micromole of substrate transformed per minute. A proposed coherent Systиme Internationale (SI) unit is the katal (kat), equal to one mole of substrate transformed per second.
